The long wait is almost over! Menya Kokoro Ph, the home of the brothless Ramen, the Mazesoba, will be opening its doors sooner than you thought!
The store is located in the 3rd Floor, Al Fresco Dining Area of Uptown Mall in BGC.
We got the chance to be one of the first people to try the Mazesoba and it is really worth the trip!
Here is their Open Kitchen where you could see the Chefs in action while preparing your Mazesoba!
On one wall, there’s a mural of the founder of Kokoro, Chef Takuma Ishikawa. Chef Takuma Ishikawa founded the Kokoro brand 2013 and has been awarded the best Mazesoba in 2014. His brand has expanded internationally to Singapore, Canada, Thailand, Indonesia and Spain, and now in the Philippines.
Cleanliness is top priority. All diners are served with this cute dry towel. It’s poured water so you could wipe your dirty little hands before eating. 😉
To start off our lunch, we ordered some appetizers.
Who doesn’t love Agedashi Tofu? Soft and creamy tofu.
The Chashu is very juicy.
I’m not much of a Takoyaki fan but this one I like. It’s crunchy on the outside then your usual soft filling inside.
So let’s talk about our main star – the Mazesoba. What is Mazesoba? It’s a brothless ramen. It’s dry ramen. It’s saucy ramen. It’s like yakisoba but it’s not. It has mostly these ingredients – nori (dried seaweed), minced garlic, soft boiled egg, green onions, chives, bamboo shoots, and spicy minced pork.
The bestseller and the original is the Tokyo Mazesoba.
When your Mazesoba is served, it’s perfectly arranged. So how to eat it?
Break the egg.
Pour some vinegar to level the spiciness.
Devour your ramen.
When you’re finished with your ramen and you still have sauce left, you will be given rice.
Mix the rice with your sauce and eat again.
Finish your bowl happy and full.
The mazesoba is really different from your usual ramen. The overall taste is so good, the mix of all the ingredients makes it so satisfying to the palate! It’s spiciness is tolerable and adds to the taste.
